On the slopes of a mountain in Matagalpa, Nicaragua, lies Finca Chispa de Oro farm, where the only single-origin coffees,
entirely grown and produced by a Quebecer, are harvested.

We can ensure complete traceability throughout all stages, from seed to cup.

With my team, we produce 'eco-responsible' specialty coffees with slow anaerobic fermentation, delicately dried in the shade of giant bamboo, resulting in a velvety body, a distinct personality, and a lingering finish characteristic of the terroir where they were grown.

Concerned about the impacts of climate change, we prioritize production techniques that leave a very low footprint on the ecosystem and
our water resources.

Respect for the environment is part of our daily life with our continuous efforts in protection and reforestation (trees & bamboo).

* Natural process;
The beans are harvested at maturity and immediately placed on african beds to dry in the sun. The skin covering the fruit allows it to ferment slowly inside its shell.
This ancestral method concentrates the fruity and sweet aspects of a coffee. The skin is removed at the end of drying.

*Proceso natural:

Anaerobic fermentation:
This involves selecting the best beans and then allowing them to ferment in an air-free environment for 96 to 120 hours, depending on the temperature and
pH. The coffee can either be simply removed from the tanks and allowed to air dry, or sometimes we process batches where only the skin is removed, leaving some of the "pulp" around the bean. The beans are then slowly dried in the sun, where they take on a golden color (honey process) in contact with oxygen. (see photo at the bottom center)

(ver foto inferior central)
